My first blog post
Never blogged before, so here goes.
I love to bake and I love to cook. I hate cleaning up when I am done. Luckily, my bestie hates to cook, but she loves a clean kitchen. We make a great team - Steph keeps it all going, and I make it taste good.
When my daughter was diagnosed with JIA (Juvenile Idiopathic Arthritis) I researched the diet-disease correlation, and found that wheat and gluten were shown to cause inflammation. Dairy was another irritant, as were night shade vegetables. I took it upon myself to take everything out of her diet that might have a negative effect on her - needing to feel a little in control of what felt like a completely out of control situation.
Interestingly, when you remove everything that is familiar and comforting from a dietary regime, the health results might be immediately apparent, but you also tend to miss some of your favourite foods that you can no longer eat. When we started her new diet, most of the commercially available gluten free products had the taste and consistency of cardboard. I decided that my daughter deserved to grow up without the deprivation and despair of a cardboard based diet.
So, the journey to create great gluten and dairy free foods began....
